Paneer tikka sandwich | Paneer cheese toast with green chutney

Paneer tikka sandwich is a deliciously spicy sandwich made with coriander and mint chutney, paneer seasoned with tikka spices, vegetables and lots of cheese on top. The sandwich is then baked in the oven (or air fryer) till the cheese melts.

Ingredients

  • 6 tablespoons coriander and mint chutney / green chutney
  • 300 grams paneer / Indian cottage cheese cubed
  • ¼ teaspoon red chili flakes
  • ¼ teaspoon red chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon coriander powder
  • ¼ teaspoon cumin powder
  • 2 tablespoons oil divided
  • 1 medium onion diced
  • 1 medium capsicum diced
  • 3 Turkish bread sliced in half (see note 1)
  • 100 grams shredded cheese see note 2

Instructions

  • Make the green chutney using this recipe here and set it aside. It is also possible to use green chutney from the supermarket. Get your favourite brand from the Indian or Pakistani grocery store.
  • Cut the paneer / Indian cottage cheese into small cubes. Place the paneer / Indian cottage cheese in a medium sized bowl. Add red chili flakes, red chili powder, salt, coriander powder and cumin powder. Lightly mix through, and let the paneer marinate for 15 minutes. The marination can be skipped if running out of time.
  • Heat 1 tablespoon of oil in a frying pan and add the paneer / Indian cottage cheese. Cook for about 2 minutes on each side, till light golden brown. Cook the paneer in batches, making sure the pan isn’t too crowded. Remove the paneer and set aside.
  • In the same pan, add another tablespoon of oil.
  • Add the diced onion, and cook for about 1 minute, and then add the diced capsicum. Cook for 2 – 3 minutes till soft and translucent. Season with salt. Remove the vegetables and set aside.

For Assembly

  • Pre-heat oven to 180°C / 360°F (160°C fan forced). It is also possible to make the sandwiches in the airfryer. In that case use the fan forced temperature settings.
  • Slice the Turkish bread (or whatever bread you are using) in half.
  • Place 1 – ½ tablespoon of green chutney on the bottom, and then top off with vegetables. Add the grilled paneer, and then top with shredded cheese.
  • Place the paneer tikka sandwiches on a baking tray and bake in the oven for about 8 - 10 minutes, till the bread is toasted and the cheese has melted. In the air fryer this will take about 5 - 8 minutes.
  • Depending on the size of the bread used, this recipe will make about 4 – 6 open faced sandwiches. For the Turkish bread rolls that I use, this recipe makes 5 open faced sandwiches.

Notes

  1. In Australia the bread that I use for this recipe is Turkish bread. They are called Turkish rolls and are sold in packs of 4 at the supermarket (Coles or Woolworths) Other options for bread include Subway style sandwich bread, mini ciabatta, flatbread, naan, pizza base, or just bread slices. 
  2. Any cheese can be used, as long as it melts well. I usually use cheddar, but you can use others or a combination as well. Some options include cheddar, mozzarella, Colby, pepper jack, pizza cheese. I usually get a block of cheese and grate it fresh. But it is possible to use already shredded cheese from the supermarket.
