Desi Cappuccino or Beaten Coffee

My hot beverage of choice is almost always Chai; made in a thermos on an everyday basis, Doodh patti on the weekends and Kashmiri Chai in the winters. But when I am out with friends I prefer coffee. Not the basic black coffee but coffee with milk, so either a Cappuccino or Latte depending on my note.

The addition of milk balances the strong coffee notes and the foam on top is just the thing for when one is feeling indulgent. Of course, I would rather pay just a little more to have a cup of coffee made from scratch then paying about Rs. 150 for a cup of teabag Chai.

Since indulgence is enjoyed best when its a rarity, what do you do when you are craving a cappuccino and don’t want to go out and pay the hefty price tag. One option is investing in one of those coffee machines or you could just do it our Desi way – inexpensive ingredients, a few minutes of whisking and the result is fancy gourmet coffee made at home.

Home made cappuccino, desi cappuccino or beaten coffee as it is sometimes called requires making a paste of instant coffee and sugar. This mixture is then beaten with a spoon incorporating air into the mixture till it is thick and frothy. When steamed milk is added, the paste dissolves to create a delicious froth on top. Serve with some biscotti and listen to the ‘ooohs’ and ‘aaah’s of happy guests.

Start off with coffee. Instant coffee granules NOT roasted coffee beans

Add sugar and a few drops of water to the instant coffee. Start stirring or beating with a spoon.

As you keep stirring the sugar will dissolve and a thick creamy paste will form. Add a few drops of water if needed.

Once a thick creamy paste is formed, add hot milk and stir carefully from the edge. The creamy foam will rise to the top.

Desi cappuccino

Ingredients

  • 1 teaspoon instant coffee
  • 2-3 teaspoon sugar
  • 1/2 cup full-fat milk
  • 1/2 cup water
  • Cocoa Powder or Cinnamon Powder for garnish

Instructions

  1. Add the coffee powder and the sugar in a cup. Add a few drops of water to the mixture just to moisten it and start beating. Be careful that the mixture should not be watery otherwise it will not beat properly.

  2. Initially the mixture will be quite dark in color but will start lightening as the sugar gets dissolved. Add a few drops of water if required and keep beating but make sure it doesn't get watery.
  3. After about 5-10 minutes of beating, the mixture will be so thick that it will not drop off a spoon if turned over.
  4. Boil the milk and water together and add it to the coffee mixture in a steady stream. As the mixture dissolves, a froth will be formed on top.
  5. Sprinkle with coffee granules or sift cocoa powder or cinnamon powder on top of the coffee and serve.

Recipe Notes

The froth depends on the amount of sugar used as well as the longer you beat it. If you beat less or add less sugar, the quantity of froth will be reduced.

The coffee sugar mixture can be made in bulk for 4-6 people and kept in the fridge for 30 minutes - 1 hour.

Instead of beating by hand, this coffee can be made using a coffee frother.
