Roast Vegetable Salad with Halloumi | Roasted Vegetable Salad

This hearty and comforting roast vegetable salad with halloumi has assorted salad greens, roast vegetables that have been flavoured with dukkah, an Egyptian nut and spice blend. Finally, it’s topped with pan fried halloumi cheese, a tangy garlic yoghurt dressing and almonds. Though I have classified it as a salad, this roast vegetable salad with halloumi is by no means a side salad. This salad can easily be the centrepiece of a meal due to its vibrant colours and flavourful…

Guide to roasting vegetables | How to roast vegetables

A guide to roasting vegetables – things to keep in mind when deciding to roast vegetables, how to roast different types of vegetables, and how to serve and use the super delicious roasted vegetables. Let me be honest. I have struggled with roasting vegetables many times – it’s not a common technique in a Pakistani or Indian household. Even when we make full chicken (or charga) we cook and fry it, but rarely roast.  It’s only in the last few…

How to make Kachumber Salad

Kachumber salad is a fresh vegetable salad made with onions, tomatoes and cucumbers. Enjoy it with daal chawal, curries, or just on its own.   We don’t eat a lot of  salads in Pakistani curries. If a salad is served, it is usually raw – sliced tomatoes or cucumbers, maybe some turnip sprinkled with salt, black pepper or some vinegar and lemon juice.  The one salad that is common in Pakistan is the kachumber salad. It’s super quick to make –…

Cheese Balls with Butter Puff Crackers

These assorted cheese balls look pretty and are a cinch to make. Serve with Peek Freans Butter Puff crackers and impress the guests at your next party. I love the concept of appetizers – finger foods usually served before a meal or between mealtimes. Sometimes called hors d’oeuvres, antipasti, or starters they can range from the simple to the complex depending on the amount of time you have and the occasion one is making them for. Tiny little bites to…

Chicken Cheese Balls

Sharing another recipe that I tried this Ramazan and absolutely loved – Chicken Cheese Balls. I am a huge fan of the Jalapeno Cheese balls at Pizzo – they are filled with melted cheese which literally explodes in your mouth. Since I can’t keep ordering from there all the time, this was my take on something similar. Turned out really good especially with the melted cheese inside. This is a recipe that I can see myself making in Ramadan (inshAllah the next…

Guacamole

I was just checking out my blog stats and I am done to about 20-40 pageviews a day from a considerably high number earlier. Just goes to show what happens if I don’t update this blog on a regular basis (Ouch).  But I am resolving to spend a bit more time on posting recipes since I have been receiving some amazing feedback on how much my recipes are being enjoyed by people! So just motivated to share more. Will probably…

Roasted Tomato Garlic Soup

We are finally getting the ‘Quetta ki hawain’ in Karachi, and getting to enjoy the chilly weather properly. The fans are off, the sweaters are on (at least in the mornings and evenings), and I can enjoy eating dry fruits & nuts with Kashmiri Chai or Desi hand-whisked coffee snuggled up in a comforter. This weather is also perfect for a hot comforting bowl of soup and with fresh, ripe & ‘affordable’ tomatoes in season, I just had to make tomato…
